Cereulide is the emetic toxin produced by certain Bacillus cereus strains and can be pre-formed directly in food products. Therefore, detection of the microorganism alone is not always sufficient for risk assessment. The decisive factor is whether the toxin itself is present in the sample and at what concentration. Particularly for sensitive product categories, suspected cases, complaints, or conspicuous retain samples, direct cereulide analysis provides a robust basis for product safety, release decisions, and recall prevention.
