Honey Testing for Physical Attributes

This is a suite of 4 accredited tests which measure Colour, Conductivity, Moisture and Brix (sugar content) in honey. Among other things, these tests are useful for characterising honeys from different origins, honeydew, and other floral sources.

A glass jar of raw honey with a yellow and white hexagonal-patterned label featuring the text “Company Honey – 100% Urcountry Raw Honey, 500g.” The label includes nutritional facts, ingredients, and manufacturer details on the side panels.

Below are examples of how Colour and Moisture are used:

  • Colour Only: is often used for characterising honeys from different floral sources.
  • Moisture Only:honey with a moisture content that is above 18% is at an increased risk of fermentation. You may wish to have an osmophilic yeast test performed on high moisture honey to investigate this risk further. High moisture levels are often found in honey harvested prior to the bee's capping the honey.

ACCREDITATIONS

Colour, Conductivity, Moisture and Brix are all IANZ accredited tests.

HOW DOES ALS CONDUCTS THE TEST

Samples are heated to dissolve sugar crystals and then thoroughly mixed before analysis. The sample is clarified, and colour is measured using a spectrophotometer. Moisture and Brix are measured using a refractometer. Conductivity is tested using a conductivity meter.
